1-1/2 C Cornmeal
1/4 C Flour
1 TBS Baking Powder
1/2 C Cranberries
1/2 C Raisins
1 Egg
2/3 C Milk, warmed in the microwave
1/3 C Suet, melted
Preheat oven to 400°.
Line mini-muffin pan with mini-muffin cups.
Mix together cornmeal, flour, baking powder, and fruits. Set aside.
Beat egg. Add milk and suet. Mix until well blended.
Make a well in the middle of the dry ingredients. Pour egg mixture into well. Mix until dry ingredients are moistened but batter is still somewhat lumpy.
Fill muffin cups approximately 2/3 of the way.
Bake until golden, about 12-15 minutes. Cool on rack before removing paper cups.
To serve, hang on plants or feeders using a pipe cleaners bent into a "J" shape such that the "J" supports the bottom of the muffin. If you don't have pipe cleaners, you can string the muffins onto raffia or twine.
Variations:
Cherries, Blueberries, Nuts, and/or Dried Mealworms can be substituted for some or all of the above fruits to result in a total of one cup of fruits, nuts, and mealworms.
